  • YMMV I suppose but my cholesterol went up just watching this video! I do agree with what Mark says about grains though.

  • I'd be curious to know Mark's opinion on the diets of OTHER regions of the world, not just North America. A lot of the food items he mentions as no-nos are definite staples of other regional groups of people, and they seem to each have their own unique benefits (i.e. Rice in Japan, Beans in Latin America, etc). Would he write those diets off as "unhealthy"?

    I don't think beans or rice alone are going to kill anyone and I think Mark would agree.........but when you live in a country like the US where so much food is loaded with HFCS, sugar, 'enriched' flour.....produced with pestecides, steroids, and every other kind of processing......if the worst thing in your diet was either some beans or rice....I think you might be ok ;-)

  • @bxrosie04 its not the rice that gives the people of Japan health benefits, its the lack of fructose, They consume up to 3 times less fructose than the average north american, cant find the exact stats but heard Taubes talking about it the other day. In effect they are much more insulin sensitive, although taking out some of that rice would make it even better :) Just my 2 cents

  • I will certainly look for that cookbook. I'm celiac and it is tough to find decent gluten free cookbooks that do not have a lot of other crap in the recipes I do not want.
