Sorry, but if you want to cook vega/.vegan, then knowing basic cooking principles still apply. Never add raw flour to a dish, it will just taste like starch, Make a roux first, No wonder vegan restos don't employ vegan chefs. You don't need to be vegan to cook vegan, know the basics, and know the substitutes and you can crank out better food than any self proclaimed vegan.
@Sogwa The milk used is Vegan. It's Trader Joe's Organic Original Soy Milk Extra. It's best to use the non flavored kind of Soy Milk when making this. You can find this milk at Trader Joe's supermarkets, but any other non flavored soy milk will do. SoyDream and Silk are two popular brands of soy milk that have been available in most U.S.A. and Canadian supermarkets since the Vegan/Veggie boom in the first half of the 1990s.
Hi, Thanks for the reply. Sorry 4 my lack or clarity but I don't do SOY. Soy milk gives me the same yucky reaction as cow's milk. l asked at the local co-op and dude suggested l use a baked potato in place of tofu and unsweetened rice or nut milk. l tried to make some form of "mac & ch" w/
* nutritional yeast
* garlic & onion powder
* salt & cayenne
* a little plain rice milk
lt came out JUST OK. I hate cooking b/c l seem to NEVER get it right minus salads
Thanks. Seems like I'm great at making smoothies, salads, sandwiches, and even mixed drinks. However when it comes to cooking/baking (as normal or vegan mac & cheese does) I'm HORRIBLE at it. :*(
But what people need to understand, is that no matter if your a vegan, or meat eater, if you want to be healthy, you need to achieve a balanced caloric intake, and sitting there eating a ton of noodles, even if it is healthy noodles, increases your caloric intake by a HUGE factor...the bulk of diet should be low glycemic vegetables (high glycemic being things like potatoes, which increase risk of type 2 diebetes)... overall great video

@Sogwa You could try the Almond milk or Cashew milk instead of Soy Milk. It might work, let us know.

@Sogwa I also react poorly to soy milk like regular milk, but I have found that silk almond milk is delicious. I go for the plain unsweetened.
