  • @stevensartifacts in food rustic means chunky. like when you leave the peels and big chunks of potato in potato soup. he's talking about using a fine grind on your pepper mill, no big chunks of pepper

  • Holy editing mishaps. 7:30 to 9:23 was almost painful. If it wasn't Alton, I'd have stopped watching at that point. It's interesting to watch older shows like this and see how Good Eats has progressed over the years.

  • Cuz not everyone wants to just watch pretty people cooking pretty food, some of us actually want to learn something.

    You won't learn much from most cook shows because they don't tell you measurements, the science behind food combined with humor like this show.

  • we like it because of exactly what you said, its educational, corny (funny) and its not a waste f time.

  • My culinary instructor believed that a professional chef learns on a basic level. That the science of cooking is what everyone needs to understand. Because of this show and my instructor, I was in the top 5 percent :)

  • I guess the process for checking for bad eggs isn't 100%. I've assisted in kitchens for about 4 years and i've gotten about 3 eggs that have bloody yolks. the strange thing is i've gotten more "red" eggs then double yolks.

  • Yeah, in early seasons, he actually said the title. It was only in later seasons that he let the title intro finish it for him...and even on a few occasions, other people said the title, including the avocado episode where the entire Good Eats staff said it in unison.

  • The avocado episode was the last time the title was said in the intro :D.

  • And I think that he should have kept going. I like it much better than the goofy prolonged pause that might not even match up with the theme.
