The video was very easy to follow up to 2:26, and then it became impossible to follow. Your butterfly is great; I wish I could make it. Could you please try and make what your doing more evident after 2:26? Thanks

On my website are also diagrams for this butterfly, maybe they are more clear.

At 2:33 I just make a valley-fold over the center-line of the model. And at 2:38 I fold a part of the piece back by making another valley-fold (over a diagonal line)
