Interceptor uses ceramic plates which will stop a 7.62x51 and x54 just fine. The steel SAPI can stop them too but require the soft body armor backing that is contained in the Interceptor vest.
Note: Steel SAPI are vulnerable to any sort of amor piercing round. Cermanic plates on the other hand are much more stronger and can resist some AP rounds especially cheap slav mild steel cored stuff. Tungsten cored rounds...? Not really.
