  • The movie King Ralph starring John Goodman taught me at an early age about this wonderful treat. Where would I be without movies? You mean I'd have to research and read a book!? hehe, Great dish.

  • Such a wonderful desert. My British Grandmother enjoys making this for me. Your recipe looks very similar to my Grandmother's, except she puts her Spotted Dick in a clean cotton cloth and boils it. Not sure how traditional it is but I have to take her word for it. She said different parts of the UK people make it slightly different. I guess in Devon where she is from they boil it as their tradition. Also I hate that people are calling it Spotted Richard now. How shameful.

    I have heard of people steaming this pudding but not boiling it... but i think you're right, everyone has their own way of making this but i'm sure it's delicious which ever way you make it

  • If I couldn't find suet in my country (I live in the Philippines), what could be a nice alternative? Will it affect the taste/texture if I use an alternative to suet?

    suet originates from the thick layer of fat surrounding the kidneys of the sheep or cow. You could ask your butcher if he can get you a block of the fat that surrounds kidneys. Place it in a heat proof bowl - cut into chunks - and then allow it to melt in a low oven for a few hours. Any blood/flesh etc will go to the bottom of the dish and you will be left with a block of hard white fat on top which you can grate and use in your recipe. Dust it well with flour before adding it.

  • Hmmmm.... that's a very strange recipe for Spotted Dick, which is a steamed suet SPONGE pudding, not suet pastry. You'd use rolled-up suet pastry for a Jam Roly-Poly.

Sorry if you feel offended, if without the name and sometimes people insult it and make it in the form of a dick, so yeah... I think it would taste good, if it didn't have the weird name...

    To you the title may sound rude, but in fact this is an old English dish that goes back hundreds of years....

    Spotted refers to the dried fruit (which resemble spots) and dick may be a contraction or corruption of the word pudding ('ding' from the last syllable)

    The word "dick" has been around for centuries, it's only in relatively recent times that it's become a slang word for penis. A bit like the word "gay" which always used to mean "happy" but now of course means something different.

  • My fiance is from London. He tells me all about his mother's cooking, and I know he misses it. We tried to make a steak and kidney pudding one day, but we did not have suet. We bought lard and used it, but after a long time of cooking, it never turned out. I would love to make this spotted dick (and other pudding recipes), but we cannot get suet. Do you have any advice?

    Have you tried looking online for it?

    Or go to a private butchers shop and he will be able to get some for you. Suet is the hard fat found around the kidneys of an animal,

    If you get a lump of suet from a butcher, keep it in the freezer and grate off what you need and return the rest to the freezer for the next time you need it like for use in steamed puddings.

  • @0nestrawberryblonde You can get Atora Vegetarian suet on Amazon. It's a lot more expensive than back in Blighty, but at least it's available. Good luck with your cooking experiments :)

  • You can get suet on line now, I am told Amazon carries it, but check this out for yourselves. Beeef suet is best, but at a pinch you can use vegetarian suet you get the same results, just a slightly different taste to the pastry.

  • I just did a quick check for you Amazon DO carry it, it's $5.99 for 250 grams for Atora Light Suet. Although I am kinda puzzled about how they can have fat with 20% less fat in it, but hey what do I know.

    They are really really good! I always found the name funny. Being 16 and saying to your friends "i made a spotted dick" always gets a laugh :L

    You should definitely make one. Just be sure to steam it properly and it should come out spongy.

    Suet is a hard fat traditionally used here for steamed puddings, but you can substitute with whatever you'd prefer to use... it is a lovely pudding to eat on a cold winters day...and yell Noah that no, i haven't ever blown a spud up in the microwave but i believe him when he says it's even more fun than cooking! LOL!

  • @myblueart Suet is quite simply rendered fat, it's perfectly safe to cook with, no harmful side effects, as I said above you can also get "Atora" vegetarian suet on line at Amazon, just go to the "Gormet cooking" section.

    Suet is a hard fat from around the loins and kidneys in beef or mutton... it is especially good in steamed puddings but yes you could substitute with any type of fat for baking...

    The custard was home made, birds eye is more yellow but still very good all the same!

  • I know this dessert well! Did you buy the suet already ground or did you do it yourself? My grandmother just cut hers up into small pieces. She used suet in Plum Duff too. Looks delish! xo

    This suet was already ground Barb, but yes i have done that before.... yes we use the same suet in plum duff ( or Christmas pudding we also call it )

    Suet is the coarsely grated fat from around the kidneys from beef or mutton...Suet and fat are not the same thing. Suet is a denser, harder fat than lard, which tends to be soft and runny (most commercial lard in the U.S. is actually hydrogenated, like shortening, to give it more body and a longer shelf-life).

    You will probably have to search out suet at a specialty butcher or meat market
