Great job on healthy economical food purchases, preparation and storage/freezing for later use. There should be more young cooks like you nowadays. Unfortunately, it is a dying art and in lieu of recent economy crisis, we need to get back to the basics that were used during the depression. I have some pork chops in the freezer and canned hominy and most of the other ingredients. It's cold outside here in No. Calif. so I will make some! Thank you.

this looks awesome---but is there is sub I could use for the hominy-- I always think of hominy as corn that was soaked in lye or something to make it turn from a corn kernel to the white puffy thing--- and I associate it with starchy starchy- am I confusing it with menudo- or is it the same? tell me oh wise one! some nutritional factors about this veggie!
@cabernetqueen Sub for hominy, hmmm - Good question but I don't think so if it's really going to be Pozole. You can use this base and add veggies for a really good Mexican flavored soup. I like to think of hominy as being dried corn soaked in an 'alkali' :) solution to remove the hulls. It is a veggie and as we know corn can be starchy. I've read that a lot of Mexicans and Native Americans use hominy as a grain. In this case that was my thought.
@cabernetqueen Pt 2 I wouldn't eat a bowl of grits (ground dried hominy) at this point in life but I figured there was more balance in the soup w/ the chicken. nutritiondata(.)com is a good site. I also use sparkrecipes(.)com when putting together dishes, if things are too crazy I don't do it or I substitute. Hope this helps. Mendo is very similar but it has tripe in it. Big Hug - Tamika

@QuiltingConnieB Hey Connie, I think I would make Menudo more if I liked tripe BUT I can throw down on a Tamale LOL, post-op the masa is difficult to get down :) I spent many summers in San Angelo, Tx - Mexican food and cooking runs deep in my blood.
