  • Just made this and Sweet Jeasus! I have never tasted a roast like that!!! To hell with a crock pot!

    Oh the bark was delicious,the meat was so tender, BTW I did not inject mine I just kept a hawk eye on the 250 temp....low n slow @ 250 for 5 hours put me at 211 degrees internal. Thanks BBQ Pit Boys!

  • Can this be done on an open fire pit? I am doing a camping trip and it will have a open fire pit and It is my job to cook. I want to cook something special.

    The meat of choice is beef so I would like to do something like this. I have about two to three hours to cook.

    I would like to make a nice roast if possible.

  • I tried this and cooked it to 200 but it didn't pull like it did in the video. I think my kettle was too hot initially. I did chop it and put on the au jous and it still tasted really good. I did try it with an arm roast as well and it seemed to work better than the blade roast.

    Just be aware, this recipe probably requires more consistent low and slow.  Its not super 'easy to do' unless you are adept at cookin' up Briskets and good at controllin' temps on your Weber kettle.

  • My ground chuck hamburgers cooked over charcoal and hickory and topped with Monterey Jack cheese and bacon were pretty good, but after watching your video I think I will kick it up a notch and try this recipe. Since the connective tissue starts to dissolve at 160 degrees this should be the equivalent of a good brisket. Capturing the jus is simply outstanding. What an awesome idea!

  • I made me a variation of this Boys. I had already mixed up a dry rub that I like, and added about a cup of JD to that mix. It turned out more of a paste than a marinade, but I slathered it on the beef roast and put her on the grill.

  • Holy f-in Cow! I lit my grill just to get in the mood! I can not f-in wait to try this one out! First i will start with the Bud, Bush, Corona and Natural light appetizer. How do you keep the fire at a consistent temp with out adding any charcoals? Did you add some and not put it on the vid? I have to know! Usually I love my cooking but I am sure it is the 20 beers prior to eating that does the trick. What State are you in, I am feeling upper mi.

  • @TheMadGriller You control the temperature by moving the air vents at the top. It's surprising how accurate it can be, and just opening (or closing) them up a fraction will lead to a change of temperature. I usually poke one of those thermometers through the holes so that I know what's going on inside without having to take the lid off. I think "low and slow" is good if you keep temperature at between, say, 230 and 250. Good luck.

I laid my grill out of bricks so I could heat it with wood, but I forgot a little detail in the process - you can't cart it in when the snow starts falling, and well, when you live a bit short of the polar circle, well... let's just say it's six feet under for now.
