To prevent off aromas:

Sanitize everything. (StarSan or Sanisan are good no-rinse products worth buying, just 1 oz does it all)

Chill WORT fast.

Keep the Brew away from light, and

take a Hydrometer reading before bottling to be sure the Yeast is done.
