  • Use the soba cooking water for the broth - many buckwheat nutriments are dissolved while cooking. There is a reason why the cooking water is often used in Japan. High quality soba noodles have a strong buckwheat smell and they are more expensive.  From experience, they are made in Japan. Korean and Chinese soba have a lot more wheat than buckwheat, which makes for a quite different experience. This is what I have seen in local stores.

  • I'm not vegan but mostly vegetarian. And when I say mostly it's because my other half is a carnivore. And she doesn't like most vegetables. Especially onions and bell peppers of any color. I think If I had a better knowledge of how to prepare other vegetables I could get her to eat some. But growing up in a non vegetarian family, I'm kind of intimidated by them. Do you think you can make a vegetables 411 of dummies video? :)).

  • @Coldfire523 At first, make her realise that she won't be healthy and (in order) will have shorter life, if she won't eat her veggies. And I see that she don't like those 'spice uppers'. That's quite wierd, cause she's missing so many delicious dishes...

  • Ahhh nooo as awesome of a twist as soba noodles sound, soba noodles and Korean buckwheat noodles are very very different.

    Soba noodles are significantly thicker and have a very soft bite to them as opposed to the Korean buckwheat noodles which are usually much thinner and very very chewy. You must try it the real way~

  • I've made these before and you can add something besides sugar if you want something that is more healthy. I try and sweeten everything I eat with naturally sweet fruits or vegetables and it tastes delicious :D
