It is obvious, in this case, that the whatever is wrong (anorexia) does not respond to logic. The therapist "proved" logically to the client that in objective reality she was smaller than she perceived herself to be. However, this did not help the client. This is because the therapist needs to appeal to her affect (emotions). The client needs to experience in a FELT way. Gestalt therapy in my opinion is one of the best to access the emotions.
For example, the client draws/paints something and then becomes that something-through her imagination and creates a dialogue with herself and what she draws. Then she can attempt to integrate the conflict.
I hope this therapist works with Gestalt influenced therapies.

Creating art and communicating verbally utilises both left and right sides of the brain, hence greater insight into an individuals thoughts, feelings and emotions.

at the end, when she draws "help me" on her stomach, there is a scene in the exorcist that has the same thing happening..only it's the possessed girl trying to tell the priest she's trapped inside. this woman either saw the movie, which i think she did, but is also conveying that she is trapped and possessed in her own body, sadly. hope her therapy is a success.
This is why I want to be an Art Therapist. I had tears in my eyes watching this girl writing "help me". The way her hand loosens at the end. Like she has lost the strength within. It is also good to see people get the help they need and deserve.

You would need a masters degree to be an Art Therapist as well as your license(s). It would be best to major in Art & minor in Psychology or major in Psychology with a minor in Art for your Bachelors degree. Graduate programs look for that background. Good Luck! :)
