@Outpuut Try using a rectangular grill with hinges - they are made of 2 stainless steel rectangular grills that close onto each other. Place the fish onto one grill & close the other onto the fish. There should be a sliding collar to keep them from opening. It's easy to flip them & you have better control of preventing the fish from burning.Thanks!
my fish always fall down from the bar while bar bquing. any suggestions to keep it on untill fully cooked?

@gregkathymyers You can use this same method for blue fish, but be sure to use blue fish steaks, as opposed to fillets.
Blue fish steaks are fantastic on the grill!
