Well, you can only record TF2 in 2.1 audio. So if you play with headphones, it would sound different than a video.

actually, I use headphones and it sounds EXACTLY like they do ingame.

Then you might want to make sure that you have headphones set in the audio panel of options instead of 2.1. The headphones setting has a better environmental and surround audio.
