On the NiGHTS gender issue: Notice that most non-human SEGA boys never wear pants for some reason.

Most non-human SEGA girls, however, wear pants, a dress or a skirt. Thus, as Reala has never worn pants in the games, that makes him male, and NiGHTS has worn pants in both games, making her female.

But I also beleive that NiGHTS is whatever gender the dreamer sees her as.

Get a C ranking or higher on both Helen and Will's missions including Wizeman's battle. After that, go as Helen and play Wizeman again. When you finish, you will unlock Helen's secret ending and different version of Dreams Dreams in the credits. It's a bit challenging but the work pays off. I hope this helps. :)

It's up to interpretation of the fans. Some thinks he looks more like a girl and others say he looks more like a boy. Technically NiGHTS is an it. His gender would depend on who he dualizes with put simply. I think he's an 'it' to eliminate the awkwardness of his dualizing with the opposite gender.

In most languages though people call something without a gender "He" which is why they call NiGHTS by a masculine term in games.

Most things that have no defined gender are usually referred to by a masculine term. The games call NiGHTS by "he" and "his" as well. Genderless things are called by masculine terms more than they are female unless they specifically look more feminine. If neutral or more masculine in appearance without a gender, then they are referred to in masculine terms.
