The top part of the item being unloaded looks like the hatch/launch ramp for the explosive line. My guess is it's a sort of reload insert.

Also, if you look at the top of the tank at 0:48/0.49 you can see that there are 2 similar looking items on the vehicle.

IN fact, one of the reasons the yanks had it so hard on D-Day esp at Omaha was that they refused the offer of General Hobart's "funnies" which include an equivalent vehicle called AVRE. @jaydenn74 that "fabric" is pretty much a hose full of c4, the "big as round" is the rocket that propels the c4 charge. the fire it over the mine field and when it goes off it pretty much blasts a path free of mines for the ABV and the rest of the vehicles to get through.
