How can he play so many different samples without lifting his hands of the keyboard? Does he have a pedal board or something? I'm just guessing, I'm a total n00b of keyboards.

It's not something people can do easily, especially if you add the fact that he smiles almost every time he changes layers.
That skill reminds me of Buckethead, who usually watches his public while palying the most difficult solo parts.

It's all done on a computer.
When i saw his keyboard.
The screen has sheet music.
And once he has played a certain part it automatically switches sounds to the next part so on and so forth
