  • Wow I didn't know making mustard was so easy o.o  I've heard that ketchup is hard, but this made it look very possible, so I'd love to try it. Plus everything would be freshly made, so it'll mostly taste ten times better than many processed food out there. Also, I though the title "Working Class" was meant to disprove the common notion that only people with a lot of money can afford and eat fresh, healthy meals (hense the constant calculation of cost and simplicity of dishes and ingredients).

  • I have a very important question for the mayonnaise that I am very concerned about. What if the eggs happen to carry salmonella??? I mean it's very possible in this germ thriving world...

  • @WueAng salmonella in eggs is found (when it's there) in the whites, not the yolks. and since you're only using the yolks in the mayonnaise, there should be practically no risk of contracting salmonella.

  • @WueAng Salmonella is found in the chicken poo, if this chicken is sick, so you would find it on dirty eggshells, all you need to do is to wash the eggshell just before you break the egg, and then wash very carefully your hands after breaking the egg. Nowadays, eggs in grocery stores are all pasteurized to prevent such disease to spread, so it is safe to eat raw eggs.

  • is the bun going to stay hard or does it soften later? that kind of difficult if you're eating a burger with a hard bun.

  • @khi021 like all bread, the buns soften as they cool!

  • @khi021 If you want them to be softer, gently cover them with a lightly (very very lightly!!!) dampened towel. The steam will have nowhere to go as they cool and helps soften the exterior I prefer a softened roll, as well. Also watch your baking time. This recipe is more of a bread than a bun, in my opinion. Try using 4 1/2cups of flour, 1/4cup warm water with 1tbsp yeast, 1 1/4cup warm milk, 4tbsp melted butter, 2 to 3tbsp sugar, 1/2tsp (NOT tablespoon) salt. This will make softer buns.

  • @mdjk89 proof 1 packet or 2 teaspoons active dry yeast in lukewarm water or milk + 1 Tb honey or sugar for 10 min. in a large bowl mix together 2 c bread flour w just over 1 c whole wheat flour & a big pinch of salt. optional: mix in 2 Tb olive oil or 1 egg. when yeast is proofed, mix yeast-liquid mix into flours & mix w hands until a soft but cohesive dough forms. flour a work surface & gently knead, 10 min.

  • @mdjk89 cover in clean bowl w/olive oil & proof, 45-60min. preheat oven and either a pizza stone or baking sheet to 375ºF. knead, proof 45-60 min more. cut, shape into buns (you should get about 6). toss a little polenta onto stone/baking sheet and slide buns onto stone/sheet. bake about 15-20 min or until they feel hard and sound hollow when tapped on bottom. let cool - buns will soften as they cool.

  • Your recipe index card shows 3 1/4 c. flour and you say only 2 cups bread flour. You need to check your video for accuracy!? where does the polenta come in the recipe?

  • @hannahnikol thanks for the questions, let me answer them for you: 2 cups of bread flour and a little over 1 cup of whole wheat flour = a total of about 3 1/4 cups flour.

    the polenta: you just toss a handful or two onto your pizza stone or pre-heated baking sheet before you slide your bread dough in. there isn't any polenta in the bread, it's just to keep the bread from sticking and burning to the stone or tray.

  • @mdjk89 they're essentially the same thing - instant yeast can be mixed right into the other ingredients, but active dry yeast needs to proof in lukewarm water or milk for about 10 minutes before you mix it into the dough. you can use either so long as you follow these simple instructions!

  • Instead of burger buns you made pieces of stone. You are supposed to let them rise big before baking. I especially ike the color of your bread at the end. Nice and black. Like a proper bread should be. Great.

  • @piramida6 Thanks for the reply, but the buns sat for two 1-hour rises and came out perfectly brown on the outside and with a good, soft-chewy crumb on the inside. The loaf of bread sent to my dad was dark brown on the bottom, although it looks darker in the video because of the lighting and video quality. I promise you...I'd never show you guys how to bake burnt buns and I'd DEFINITELY never send my dad burnt bread!

  • Would this work with gluten free flour and yeast that is gluten and milk free? Gluten free baking doesn't always work the same as regular, so if you happen to know that would be great!

  • @SSJkiller clean hands are better than dirty gloves; gloves in and of themselves are no cleaner than your hands, which you can wash as often as necessary, and that's totally fine when you're cooking for yourself. go watch a video by bobby flay or any professional chef - they're not wearing gloves, either.

  • @discountninjuh We also didn't grow, harvest, and mill the wheat for the flour, if you really want to get down to it. We COOK from scratch, which means we take raw ingredients and make dishes/meals from them.

  • Maybe blending mayonnaise is easier, I have to agree on that. Yet the real chef challenge is to beat it with a spoon in a bowl, while adding the oil. Trust me, it's a real pain (Eastern European guy here) but if you do get it right, you WILL call your mother and brag about it on the phone for at least 10-12 minutes. Then realize she's been doing it for the past 30 years and feel slightly modest.

  • @HungryNation That's right. The heinz ketchup has all sorts of corners cut so it'll stay on the shelf and is 'good enough' for everyone. It's over sweetened and heavily salted, so it doesn't quite taste of tomatoes.

    Making it yourself from stewed tomatoes means there's a lot more tomato flavor and you don't need as much salt as a preservative. What's more you can customize it to your taste.

    Honestly, I don't think anyone who puts this much effort into what they eat will ever be fat.

  • GOOD CHOICE with the King Arthur flour. Other nasty mainstream flours have Bromine and a considerable amount of iron filings in them. Although there's always Gluten to come ruin the day.   • brendan i like to do fusion food... Do you think there is a way to mix in italian or indian stuff into the burger like curry burgers? (sounds gross)

    i stay in singapore and there's this famous dish called laksa. Its basically vercimelli with a kind of mildly spicy sauce that tastes like curry but is less spicy

    I've managed to fuse the sauce into spaghetti and it tastes fine (to me). I have exams coming so i won't be making a vid about it but when i do brendan please try it too =]

  • @Poweryouup Burgers are a blank canvas, there's a LOT you can do with them. Curry Burgers are some of my favorites. I also do Chevetta's (a local vinegar based BBQ/Mainade) Burgers, Tonkatsu Burgers, Dill Burgers, almost anything that's in my fridge or spice rack has either made it into a burger, or it's in line for my next batch.
