Your question has seriously stumped me. I can't think of any good reason for them to be the opposite sex. I also wondered where their names come from. My first thought was that their human counterparts would name them but there is no way I would be able to come up with the name Pantalaimon when I was a kid.
I was reading it as day-mon too the first time I read the book! I didn't realize it was like demon until I saw the movie. I was convinced it couldn't be demon when I was reading because the word demon usually has such a negative connotation and they (mostly) aren't evil in the book. I made notes while I was reading too! I love that everyone loves Iorek, he's just so perfect.
