I have run 2-stroke powered boats and sleds pretty much wide open for extended periods and they have never had problems from it. This video shows what you can do with plenty of horsepower, a lot of daring, and some skills thrown in!!

Not sur e about water but if there was a wave apraoching id like to be able to throttle a bit to lift my front end over a wave. If I pinned it 100 throttle id probably end up going to fast and start skipping my front end in. If the nose would go below the water at high speed if you hit a bump I think your screwed.
I stand corrected. Open water sledding is NOT a subject I'm expert on! After accidentally crossing a lead of about 20 feet on my SRV, many years ago, I made it an iron-clad policy to avoid even the possibility of open water. The guys riding these machines across miles of water surely have my respect.
One thing I DO understand very well is 2-cycle engines. If they're in proper tune, you can run them at high or full throttle for as long as you'd like.
i could see the possibility of that on one or two small spots on a lake but look at the vast areas of open water like right around 1:40, no way is that 2" of water, i have grown up around lakes my whole life and i can tell you this when ice goes off a lake it goes super fast, if it was water on top the area wouldn't expand so far, there would be patches of ice here and there cause ice isn't perfectly even and it would have to be for that with no ice spots exposed
