@gravediggermax I'm telling you what, this system is no joke. You can do what your typical wet stones can do in 5 minutes. To go that extra mile of course, you can't beat some 5000-6000 grit wet stones but this grinder is worth every penny. I will never look back. You can also get an extremely fine stone for this grinder.
I have a similar system, not tormek, but at really low angles I find the jig gets in the way. Maybe it is just my system. I just free hand it on the wheel then move to free hand on stones.
i sharpen many fish fillet knives like u did and i am considering a purchase.
i use wet stones now and they do ok for me, but .....there is always that but.

@difflocktwo True, at really low angles if the blade is not wide enough you have to free hand it.
