I'm from germany,. and sorry, but I currently can't speak any german - I got my YT english on ^^ - but I don't say "it's över" but "it's o(u)ver". it's like you said, there aren't any good words which resemble the german "ö".
I'm sure YOU know this, but it's very difficult for anyone who learns german ^^
It would be awesome if you posted another video. I don't know German, but I would love to learn. The fact that German doesn't have a hard and fast rule about masculine and feminine words really interests me and it was even more fascinating that the language has nuetral words. I wish more emphasis was put on learning different languages where I grew up...

Yea sorry I haven't been making videos -I just got back from Japan and been busy as hell with work and university.
About there being no hard/fast rule, there is (if I'm understanding correctly)
For example: Die Frau but Auf DER Frau
