Hi just seeing this, and I love your recipe. I dont usually put relish in mine but it was good. I also wanted to experiment and added tuna to my yolk mixture and it was fabulous. Thanks for all of the tips.
Your eggs came out lovely, but I wish you would've put a disclaimer not to cut them in your hand! The eggs can be very slippery, and you could cut yourself very badly!
at easter i went to my my friend's grandma's house with her and her cousins which have been my friend for a long time :D and so they had these and so my friends cousin got one that was blue xD
Vinegar softens the shell, it is a chemical reaction between the calcium in the shell and the acidity of the vinegar. The salt helps with fluid transfer through the more porous shell.
my aunt used to make these and she would get so mad at me cause I'd only eat the filling, leaving the egg white!! To this day, I just don't like the taste and texture of boiled egg whites
vinegar & salt is for preventing eggs leeching out. When an egg has a crack, heat will expand it causing it to leech out its yolk. Vinegar & salt keeps it sealed up in high temp.
Omg, i just love your recipes! I just got married and i'm just starting to learn how to throw down in the kitchen thanks to you! keep them coming diva!
i also love your blog! i love to see us sistas doing something positive for our community, GOD blesses those who bless others! THANK YOU!!!!
I wondered the same thing . . . the egg shell is impermeable so I don't know how the vinegar and salt can possibly affect what's inside the egg shell.
@AtheistExile Because the shell is not that impermeable, it is the the film just inside the shell that is. Heating the egg will denature the proteins in the film so that it will not keep it's proper functionality and liquids will be able to penetrate better. It would also be the acidity that would react with the denatured proteins in the inner film and cause it to stick to the shell and separate from the albumin of the egg white which is more + charged than the now - charged film.
Girl, I am going to try this recipe. BTW, I saw you on the Philadelphia Cream Cheese commerical. I said wow! That's Monique! Go on Diva! You need your own show. Have you thought about trying out for Next Food Network Star? The new season just started. I can totally see you doing it and being a success!
Looks great! I just wanted to tell you that I saw you in the Paula Dean commerical over the weekend! I screamed liked I had I just seen my best friend on TV!! Congrats on the TV spot!
Love your tutorial. I have to try onions & garlic never thought about trying that. I add a pinch of sugar and crumbled bacon on mine but I will try yours out. Great Job!!!
I absolutely love deviled eggs!!! Ive never seen it with onions though. A lot of southern cookers swear by Dukes but Ive never tried I always keep it simple with Kraft.
You stick with the Dukes "AS for me & My house we serve HELLMANS" LOL!!! Oooooo I said a dirty word! LOL!! Dukes and all that vinegar I feel like some one gave me a shot of apple cider every time I taste Dukes, LOL!!! Now come to Wilmington & get some good CRAB Deviled eggs. LOL!! :) Its all play, LOVED THE VIDEO!!
@ItsMeFawn ****GASP & FAINTING**** How dare you speak such profanities Fawn!!! HELLMANS!!?!! You are an NC chick you are suppose to be sold out to the DUKES baby!! LOL I might act like I don't eat Hellmans, but give me a plate of deviled eggs made with Hellmans and see if I don't eat the whole thang LOL...but Dukes is still better though.
@divascancook DUKES and my mouth never the twain shall meet! For more than one obvious reason...ITS DUKE BABY & WHO AM I?? I AM A TARHEEL ALL DAY EVERY DAY even in my food choices. So Dukes gets the get thee behind me Satan, LOL!! Now those better been Mt. Olive Pickle Relish, LMBO!!!!!!
@divascancook You got to make it down here, my brothers restaurant was voted one of the Top 25 restaurants in NC. Check your Wednesday Charlotte Observer to read the article on Catch Restaurant in Wilmington, NC.

what does the salt and vinegar do to the eggs?
CNguyen66 1 year ago 9
@CNguyen66 makes the eggs easier to peel.
divascancook 1 year ago 3
@divascancook I guess that is right...adding vinegar to the water when making poached eggs keeps the whites from breaking apart in the water.
