What you "need" is any liquid with enough released carbon dioxide. Champagne does have more than most sparkling wines, but soda or bottle conditioned beer could also do.

That's what happens if you try to sabre regular sparkling wine. You'll need champagne to sabre, or else the bottle will explode like that.
