Ardi means sheep and gasna means cheese in basque, which is a language spoken in the Basque Country (that covers a part in the north of Spain and another part in the south of France).   • we do these at the restaurant i work in a similar way. baby courgettes with their flowers on, we take out the stems, do a slit and open the flower, and put some spanish goats cheese inside, battered and deep fried for ~40 seconds and then drizzle honey on top

  • @liarsclub75 yeah many people eat stuffed squash flowers. That being said things like tomatoes for sauce, bell peppers and squash, such a big part of italian cooking, actually originated in Mexico. In fact polenta even though it has been consumed since roman times, recently (300 yrs) incorporated corn into the recipe, which is a spin off of mexican Atolli, a corn gruel.

    Still not sure why the squash blossoms were really necessary. If you stuff something in cheese, cover it in batter then deep fry, it'll just taste like fried cheese.

  • This reminds me of the Summer I looked after a ladies garden for her. She complained about me up and down because the squash did not come that year. I found out she was sauteing the blossoms with her morning eggs.

    FYI There are false blossoms that the squash put out that do not fruit. It takes a pretty good eye to tell them apart. These would be good to use.

  • I know take a risk in doing this, but for the first time in 630 videos I feel I have some advice or a suggestion for this recipe. You see those 5/6 protuding things near the base of the flower at 0:26, they should be, and generally are snapped off before cooking as they're rather prickly and not that good to eat. The second thing is the removal of the stamen that we see at 2:13, that is bitter (and ugly) and removing it leaves a little more room for the stuffing. Go easy on me...

  • hey Chef john, try stuffing them with oaxaca cheese or chihuahua, jalapeño(brunoise), red onion(brunoise) and epazote, i use to have them on my menu, and was a top seller :)and i used Tempura batter, if you cant get oaxaca or chiguagua chees try mozzarella.
