His final form is actually a pun on his name.

That statue is a depiction of the Classical Atlas, the Titan who holds up the sky (or earth) in Greek Mythology.

This plays on Fontaine who takes on the name of Atlas, he ends up looking very much like the depiction of Atlas in the statues.

Although I hated the final fight it did find that aspect of it nice. Although in that case they should have called the final level "Atlas" instead of "Fontaine"...oh well.
