Never download the updates from ITunes. Download redsnow and updates from third party sites. That way, you can jailbreak and unlock it with the new update.
Okay. I have an iPhone 2g. I got it unlocked and i use it for TMobile. But my dumb ass got the newest software update and its locked again. Can I just unlock it again and make it work for Tmobile??

nice , but it was hard for me , i used unlock-iphone . org to unlock my 3G iphone , it was really easy

Yes, you will lose your unlock.
If you are on 2.2.1 using it stay with it.
Today was the day when the unlock for 3.0 was coming out for 3g but its already out for 2g
So stick with what you're using for the unlock/jailbreak to come :)
