  • Another option for scaling fish is to do it in a basin of water. The scales do not fly everywhere.

  • Maangchi, May I share a method of scaling a fish with u? My grandfather would always put the fish in a plastic bag(the kind u get from the grocerry store) and in the sink he would scaled the fish with a spoon ( the stainless soup spoon). He said that way the fish scale does not fly everywhere. It seems to work for our family.

  • Maangchi you should try and use the back of the knife (the flat part) to scale the fish as it wont eat up/dull your blade and will actually be smoother because u can do it perpendicular (90* angle) compared to a lower angle which make cut the fish.

    Also, did you remove the gills before adding it to the soup? I know the gills become bitter so thats why I'm asking...I really want to make this on a nice cold day :)

  • Yes, it will still be delicious without using hot pepper flakes.

    I used 1 tbs hot pepper paste and 2 tbs fish sauce to make the maeuntang sauce. Fish sauce and hot pepper paste are salty. Check the written recipe on my website plz.

  • just so you guys know, mirin is not really wine. mirin does not contain alcohol...

  • Sorry, but that is not correct. While a large percentage of mirin is sugar, it does contain alcohol (if you get REAL hon mirin). The alcohol percentage is usually around 14% (sake is usually about 20%). If you get shin mirin, then there is very little alcohol in it.

  • thanks for your work, my boyfriend is korean and i am chinese, i tried making one of the korean dishes you taught here and he was amazed. the only problem i have is the ingredients, it's hard to find some e.g. mineri. personally i really like "daegu" tang (not sure if i spelled that right) i wonder if they have the same soup base..

  • I recommend Korean red pepper flakes. Most of red pepper flakes in the Asian markets are from China. Their color is darker not bright red like Korean ones. Some say that the flavor is different, too.

  • no, radish makes the soup tasty. It should be boiled for a long time.

I notice many asian recepes have many ingredients all together in one pot leaving a beautiful presentation like your recipe here.   • Good point! :0) Sometimes shrimp heads give weird mud like smell and ruin the taste of soup. So I did not use them for this recipe not to confuse viewers. How can you know if the shrimp head has not strange smell? Take a sample shrimp and boil it and taste it. If it's ok, you can use it! : )
