I eat an egg at work every day and lately that membrane directly under the shell has been really tough and it sticks to the egg. There's no way I could do this trick on the eggs I've been getting. I'll sit there trying to peel the egg and I'm having to take a layer of egg off with the shell. It pisses me off so much.

@ninjajesus81 you might be boiling the eggs too long, or too short.  I forget which one, but that could help. It really works - and when its boiled just right it tastes SO much better!

@EckoMMA it helps a lot to poke a small hole in the eggs before boiling them...use a needle or a tack. The eggs will then have a little moisture between the shell and the egg...and peeling is very easy.

you can also just use the spoon to peel the shell, much easier than picking it and it only takes a couple seconds. "Scoop" the egg out of the shell if you will.

@ninjajesus81 Cook them an extra 5 minutes. It's hard to overcook hard-boiled eggs so don't worry about it. It helps if they're fresh too. =)

@ninjajesus81 when eggs are really fresh the membranes are tough, new eggs are good for frying older eggs are good for boiling. when you buy em set em out on the counter for half a day, dont worry every one day out of the fridge is like a week in the fridge.

You are using eggs that are too fresh. use your fresh eggs for frying/scrambling/whatever and use eggs that are 3-5 days old for boiling. eggs seep air through their shells slowly over time, so after a few days there is some wiggle room which makes them peel much easier.

@ninjajesus81 Usually it means you've boiled for too short a time. Also, eggs are not shipped and sold immediately after being laid by hens, for texture and flavour reasons they are stored for a week or so, similar to aging beef and other meats. At least, that's how it's done where I live. If not aged, the skin will stick no matter.
