A pretty good one and somewhat close to the original recipe. we don't use parsley though. compliments from an Italian. You also use pasta de cecco that is the best commercial brand of pasta(on my opinion)
Di, I'm eating your version right now...It's delicious! I have had an "authentic" recipe for years, and it's great...but yours is better! It just goes to show that there is always room for improvement. Thanks!
i saw 100's of carbonara recepies on youtube and this one is the closest to the way i make it. i was kinda disapointed when u said drain the bacon but made up for it at the end :P
Dont drain the bacon ppl u live only once! i fry my bacon (or panceta) and prosciutto together on butter and drain nothing m m m m fatty but good!
This is very close to original Carbonara...I don't understand the people who are so upset! Looks yummy and I will definitely try it at home! Thanks :)
looks great to see that such a recipe is appreciated abroad, if i may add a note,... well... in Rome we don't use cream, and the pancetta is prepared and cut in smaller pieces of an average size of a cm or some ;)
Is this woman trying to say that Italian woman dress like this in the kitchen? If I was Italian I would be very offended by this. Maybe her secret ingrediant is adding a fingernail to the sauce.
You cant call something "Carbonara" when it is not. You cant have another version of it. Call it something else. Call it rigatoni with proscuto and bacon. I can understand Italians getting angry with this because someone who doesn't know what Carbonara is will think it is this.
I am Greek and we make something which is similar to lasange, but we call it "Pastitsio". We don't call it lasange because it simply is not. I wouldn't make this recepie anyway. Just looking at this woman puts me off.
@aposapes oh btw im not a prostitute coz im a guy and btw i would rather eat something cleaner =)) oh and your insults isnt anything to me.. maybe you should go ahead and jump down the building coz you're not needed? way too mighty over the internet are you? well its what you are thinking.. but you're just a lump of cow dung to me =)
Sorry to disappoint you, but this is all wrong... milk? Parsley? Never heard of it and I am Roman, where this dish comes from. Pancetta must be sliced in little cubes, yes the size and shape will change the taste. Must NOT be crispy at all... a bit on the crispy side is nice, but it must NOT be crunchy. Also you don't use whole eggs... one egg yolk per person + one egg white every three persons. When pasta is ready you throw everything in a fry pan on high fire without making an omelet. :)
@mikevaleriani That's why she said that it's "her version" in the title of the recipe. Why are Italians so arrogant about food, anyway? As long as the food tastes good, that's all that matters.
@aurayon Italians aren't arrogant about their food. They take pride in it. They are famous for their cuisine, so when someone changes it and then advertises it in public it is insulting. I love Italian food.
@WisteriaLane3454 They are overly arrogant and prideful of simple dishes such as carbonara. Yes, I do understand that they are trying to maintain the original recipes. But it seems as if they have a hatred for anything new, plus that hatred is always geared towards Italian Americans. That attitude is really off-putting and inappropriate. And honestly, I can think of several other cuisines (the regional cuisines of China, for example) that are much more complex than Italian cuisine.
@WisteriaLane3454 I'm italian. I saw nothing wrong with what she did - different sure, but similar fundamentals and taste. The title DOES say "MY VERSION" so only people dumb enough to NOT READ will have a problem with it.

nice revisitation of this dish ^_^ I still prefer the one without the cream =).
You can obtai the cream by adding some of the cooking water from the pasta just 2 or 3 minutes before the pasta cooking time is reached ^_^ at that point the hard grain pasta will drop starch in the water and it will do the trick ;)
Hi Diana!!! I'm an italian guy living is Vienna.... i just want to say that u have such a humor while cooking and preparing this faboulous dish! i would just suggest u (just because i find this suggestion bery useful) to try to chop the pancetta much more finely; in this way all the taste/flavour will be be even more rich, and the pancetta will not dry too much (as it looks to be around 4:00)... btw, thank u!!
Thanks for sharing your recipe. Next time, try it with a little hot pasta water instead of the cream and see how it turns out -- should still be creamy delicious.
This looks delicious. And like the title says, it's "her version". All the hateful comments should be marked as spam. Funny how these commenters think that the world revolves around Italy. You better thank China for your noodles. And thank the Americas for corn for your polenta. And so forth. It's as if they were never taught world history. Anyway, great video! Keep cooking Diana :)

@tippytootoo: Italians are not "neuronic and picky" about food. That's your definition of a kind of Culture you just can't understand.
Nobody is gonna tell you how to cook or eat, if McDonald's style food makes you happy, go ahead and help yourself (and good luck with your health).
But if you want to enjoy the best and more popular cuisine in the world, the one that everyone wants to imitate, there are some rules to follow, like in every other form of Art.
keep cooking italian food..you are a great chef.. these silly gits couldnt even cook 10% of what you can do.. they only sit at their mama's table and eat.. they have no idea what it takes THANKS FOR THE VIDEO KEEP IT UP!
OK I am gonna say it. Italians are the pickiest and neurotic eaters I have ever met. They will only eat their mommas sauce or "gravy" or pasta. It doesnt surprise me all of the negative critiques. All of my Italian friends will admit it.
Just for the record. The Italian comments are not positive as you are using BACON/PANCETTA and that's a big mistake for them. The Carbonara comes from Italy and Italian cooks only use GUANCIALE and never BACON/PANCETTA. Then original recipe says you have to use ONLY olive oil, Parmesan and Pecorino cheese. Anyway it is your version, ok. Buon appetito!
we KNOW how to do it in the right way, and this recipe I KNOW IT FOR SURE do not taste so good. Many italian people write the traditional recipe. I didn't do that. I do something similar to this one here. But the most important thing (that changes the whole flavour) is that you should put pasta in the pan with pancetta and let it cook a bit with it. So you have to take it off from the water before you think it is cooked. this will give you the correct taste.
Thank you PrincessDiana161, I hope you'll be here in Rome soon, and you'll be my guest. Meanwhile... give my greetings to NY and to US... they are REALLY my Dream. With love, Dave from Rome.
P.S. I Love NY and US from the bottom of my heart and visit your country is my only dream!! this is not Racism at all... it's just my thought about carbonara. I Love America, God Bless you!!
PrincessDiana161 Thank you very much for your invite. I'll be proud to come to your city and bring to you a slice of Roman Guanciale to cook our carbonara together. I'll be proud to let you taste our carbonara Romana. A powerful hug from Rome Dave!!
its embarrassing to read these comments. You people act like children. Piergiorgio2764 please make a tutorial video explaining the authentic method to make Carbonara (since your channel could use at least one video upload), instead of getting on the internet and hating on people. I found this video while hunting for a good recipe but reading these comments really sucks.
PrincessDiana161, thank you for inviting us into your home and sharing your recipe.
embarassing???' Why??? and why act like children?? I'm from Rome where carbonara i born and THIS IS NOT! carbonara.... If yoy live in NY eat cheesburger not carbonara that's not carbonara. Greetings from Rome!
If this is your version, you should not call RIGATONI ALLA CARBONARA, because bushels offending the Italian kitchen.. you should eat just hamburger and the other disasters that only you Americans people are capable of to do and to eat..
well, original or not : the most important thing is,that its TASTY,forget about the name of the dish! thats, what makes a REAL cook : inventing new things or variations of a meal...
I would like to eat this, and I think I will cook it next week or so...
Diana you rock girlfriend! You're definitely doing something right if you have haters taking time out to blast you. You've got a fan in me! Fuggettaboutit!!
those people posting hate comments are lifeless.. when they dies , they know where they will go to. insulting with vulgarities and other nasty words/sentence proves how lowlife they are.
What is it with you people???If you tried this recipe, and you liked it, then post a comment recommending it, or if it didn't turn out, say you didn't much like it....don't bring in all your politics and shit....all you haters, get some anger management for God's sake!!
Okay, so it seems you've pissed off some Italians. So, if I were looking for a video on how to cook carbonara and saw this I'd be disappointed. However, it looks pretty tasty so why not just call it something else? Then everybody's happy.
Really, it would be like if I called my shitty Nissan Sunny a Ferrari. Everybody would be like "Dude, that's not a Ferrari" and I would say "No, it's MY VERSION of a Ferrari."
fuck them alla "sweetheart " i love your cooking... AND JUST SHE SAYS ITS HER VERSION SO ALL OF YOU ITALIANS SHUT THE FUCK UP!! keep good work sweetheart :P hehe :)
that looks real good....you don't need salt in the water with the pasta in any dish..especially in carbonara, it has enough heart attach ingredients in it already.
Sorry....emmm..the ham that you must use is non like that!!! tha real carbonara is made with GUANCIALE , a special delicatessen producted in Rome. Also the eggs cannot be so crude!! when the rigatoni are done, you have to put them in eggs and cook it a little bit in the kettle, but it stil must be moist!!
italian u r making ur country getting criticized because of ur behaviour.. know how to behave even on the internet..sure! it's not real cabonara but she said its her version she twust up the ingredient by her self you expect everyone to cook the same taste and same image cabonara??
beautyfull princess first of all you look in good shape ;-)) accept my version and don't forget that each version of this food is valid good and very appreciated - ciao, bellissima e bravissima
I saw Anne Burrell the assistant to Mario Batali make this recipe, almost exactly to the version shown here except she used American smoked bacon instead of Italian bacon, I assume because she liked the flavor better. I was shocked to learn that the sauce was made from eggs, but when I made it, it was the most delicious dish I ever ate. She said Italian chefs make this dish as a breakfast or very late supper when they close the kitchen and need a little something to nosh upon. I can see why.
Is it okay if I boil the carbonara sauce a little instead of putting it straightaway in to the pasta? Cuz my mom has an allergy to eggs when they're not somewhat cooked...^^; Is it okay if I fry some garlic along with it? I can somehow feel the taste of garlic in some restaurants.
i agree with people not paying attention as to what is said, then just opening their stupid mouth!

ncprice777 2 years ago
we KNOW how to do it in the right way, and this recipe I KNOW IT FOR SURE do not taste so good. Many italian people write the traditional recipe. I didn't do that. I do something similar to this one here. But the most important thing (that changes the whole flavour) is that you should put pasta in the pan with pancetta and let it cook a bit with it. So you have to take it off from the water before you think it is cooked. this will give you the correct taste.

its embarrassing to read these comments. You people act like children. Piergiorgio2764 please make a tutorial video explaining the authentic method to make Carbonara (since your channel could use at least one video upload), instead of getting on the internet and hating on people. I found this video while hunting for a good recipe but reading these comments really sucks.
PrincessDiana161, thank you for inviting us into your home and sharing your recipe.

nailh1970 2 years ago

Uhm...the dish is Italian. I guess because Americans don't exercise?

@MrOboema: sure, the dish is Italian, but the only thing her version has in common with the original recipe is the name.
She's very enterteining though.

well, now I tried it (with bacon) and I have to say : GREAT !!
it is really a tasty and easy meal and ready in about 15 minutes (depending on the pasta you use)
MrYallayalla 2 years ago
well, original or not : the most important thing is,that its TASTY,forget about the name of the dish! thats, what makes a REAL cook : inventing new things or variations of a meal...
I would like to eat this, and I think I will cook it next week or so...

la carbonara non è regolamentata ne codificata quindi ognuno la fa come gli pare (giustamente)
e se anche ci fosse una ricetta ufficiale, (e NON c'è!) uno potrebbe comunque farsela come cavolo gli pare.

Okay, so it seems you've pissed off some Italians. So, if I were looking for a video on how to cook carbonara and saw this I'd be disappointed. However, it looks pretty tasty so why not just call it something else? Then everybody's happy.

that looks real good....you don't need salt in the water with the pasta in any dish..especially in carbonara, it has enough heart attach ingredients in it already.
but carbonara is my favorite.

Sorry....emmm..the ham that you must use is non like that!!! tha real carbonara is made with GUANCIALE , a special delicatessen producted in Rome. Also the eggs cannot be so crude!! when the rigatoni are done, you have to put them in eggs and cook it a little bit in the kettle, but it stil must be moist!!
ivybeda 2 years ago
the title says " MY VERSION " so there is no need for her to use guanciale ^^

I saw Anne Burrell the assistant to Mario Batali make this recipe, almost exactly to the version shown here except she used American smoked bacon instead of Italian bacon, I assume because she liked the flavor better. I was shocked to learn that the sauce was made from eggs, but when I made it, it was the most delicious dish I ever ate. She said Italian chefs make this dish as a breakfast or very late supper when they close the kitchen and need a little something to nosh upon. I can see why.
LeonaLeverette 2 years ago
Is it okay if I boil the carbonara sauce a little instead of putting it straightaway in to the pasta? Cuz my mom has an allergy to eggs when they're not somewhat cooked...^^; Is it okay if I fry some garlic along with it? I can somehow feel the taste of garlic in some restaurants.
