  • i saw 100's of carbonara recepies on youtube and this one is the closest to the way i make it. i was kinda disapointed when u said drain the bacon but made up for it at the end :P

    Dont drain the bacon ppl u live only once! i fry my bacon (or panceta) and prosciutto together on butter and drain nothing m m m m fatty but good!

  • You cant call something "Carbonara" when it is not. You cant have another version of it. Call it something else. Call it rigatoni with proscuto and bacon. I can understand Italians getting angry with this because someone who doesn't know what Carbonara is will think it is this.

    I am Greek and we make something which is similar to lasange, but we call it "Pastitsio". We don't call it lasange because it simply is not. I wouldn't make this recepie anyway. Just looking at this woman puts me off.

  • Sorry to disappoint you, but this is all wrong... milk? Parsley? Never heard of it and I am Roman, where this dish comes from. Pancetta must be sliced in little cubes, yes the size and shape will change the taste. Must NOT be crispy at all... a bit on the crispy side is nice, but it must NOT be crunchy. Also you don't use whole eggs... one egg yolk per person + one egg white every three persons. When pasta is ready you throw everything in a fry pan on high fire without making an omelet. :)

  • @aurayon Italians aren't arrogant about their food. They take pride in it. They are famous for their cuisine, so when someone changes it and then advertises it in public it is insulting. I love Italian food.

  • @WisteriaLane3454 They are overly arrogant and prideful of simple dishes such as carbonara. Yes, I do understand that they are trying to maintain the original recipes. But it seems as if they have a hatred for anything new, plus that hatred is always geared towards Italian Americans. That attitude is really off-putting and inappropriate. And honestly, I can think of several other cuisines (the regional cuisines of China, for example) that are much more complex than Italian cuisine.

    Love the recipes, love the passion, and really love the interplay with the above mentioned cameraman/squeeze!

  • nice revisitation of this dish ^_^ I still prefer the one without the cream =).

    You can obtai the cream by adding some of the cooking water from the pasta just 2 or 3 minutes before the pasta cooking time is reached ^_^ at that point the hard grain pasta will drop starch in the water and it will do the trick ;)

I'm an italian guy living is Vienna.... i just want to say that u have such a humor while cooking and preparing this faboulous dish! i would just suggest u (just because i find this suggestion bery useful) to try to chop the pancetta much more finely; in this way all the taste/flavour will be be even more rich, and the pancetta will not dry too much (as it looks to be around 4:00)... btw, thank u!!

  • we KNOW how to do it in the right way, and this recipe I KNOW IT FOR SURE do not taste so good. Many italian people write the traditional recipe. I didn't do that. I do something similar to this one here. But the most important thing (that changes the whole flavour) is that you should put pasta in the pan with pancetta and let it cook a bit with it. So you have to take it off from the water before you think it is cooked. this will give you the correct taste.

    it is really a tasty and easy meal and ready in about 15 minutes (depending on the pasta you use)

  • Sorry....emmm..the ham that you must use is non like that!!! tha real carbonara is made with GUANCIALE , a special delicatessen producted in Rome. Also the eggs cannot be so crude!! when the rigatoni are done, you have to put them in eggs and cook it a little bit in the kettle, but it stil must be moist!!

  • I saw Anne Burrell the assistant to Mario Batali make this recipe, almost exactly to the version shown here except she used American smoked bacon instead of Italian bacon, I assume because she liked the flavor better. I was shocked to learn that the sauce was made from eggs, but when I made it, it was the most delicious dish I ever ate. She said Italian chefs make this dish as a breakfast or very late supper when they close the kitchen and need a little something to nosh upon. I can see why.

  • Is it okay if I boil the carbonara sauce a little instead of putting it straightaway in to the pasta? Cuz my mom has an allergy to eggs when they're not somewhat cooked...^^; Is it okay if I fry some garlic along with it? I can somehow feel the taste of garlic in some restaurants.
