The reason why is because drummers will sometimes mix brands in the studio because they either like the sound, or their tech or studio tech will recommend it. So in this case, he is using Z custom hats and a ride because of those explanations. But, whatever brand they endorse, they use live. So, Tim will use Sabian, and mix other brands in the studio. Like Joey Jordison for example, he has been using Paiste for a long time, but he also uses Meinl in the studio too. Drummers also mix drums up too
