  • Anko is a paste made or Red Beans and sugar. The red beans are boiled until soft and then they begin to fall apart. Some people like it smooth and other like it with little bits of beans. Add sugar to taste during the last stages of cooking so that the red bean paste is sweet. It should almost have a cookie dough consistancy and almost as sweet (but not overly sweet.)

  • I'm slightly confused. Why did you title the video as dorayaki? Wouldn't it have been better to just call is obanyaki in the title?

  • Anko is a red bean paste. It can be bought already made in a can at an asian market. Or made from scratch, buy the loose dry red beans at any asian market. put in sauce pan and cover with plenty of water. Bring to a boil and then reduce heat and simmer covered until soft (several hours). Add sugar to taste and mash beans to desired thickness. Get a can first so that you will know the sweetness and consistancy. I like to have a mixture of partially mashed beans and paste.

    I use a store bought pancake batter made by Krusteaz, you follow the recipe on the box for pancakes. The beauty is that you only just add water and it works great. It rises really well and make wonderful pancakes too. I buy it in a big bag at Costco or you can get a smaller box at the supermarket. Good luck!
