  • Could you also grease the baking tray instead of using the greaseproof paper or would it be difficult for the cake to come out?

  • @BlackSabbathFan1985 You might get away with it, but it is a lot easier if you use the paper because the resulting sponge is so thin.

  • wish the US sold double cream but heavy whipping cream is all we have and its like 5% less milk fat than double cream. eh, o well

  • I just finished making this, and wow it looks amazing! No idea how it tastes (though sampling from other people say it is delicious) but really it doesn't matter, Xmas log is supposed to only look nice:)

    But bonus that it doesn't have flour, so everyone can enjoy it! Merry Christmas x

  • @TheHappyChap101 It takes us about 4 days to eat one of these in our house. So at least 4 days :-)

  • Made this today as a trial run for next week, very delicious indeed. I will reduced the sugar content in the fudge slightly as it was too sweet for me but perfect other wise.

  • sooo pretty, i don't know if there's a legend behing the xmas log but whatever, you don't want to share it with any1 and this is the best part - because i had a problem with sound i turned the transcribe audio on and had such a laugh, i'm pretty sure you won't actually say all those when baking a xmas log but have ago to it to brighten up your day titli

    cream with a higher fat content so it is naturally thicker.

  • @zh354 I was aswking mystelf the same thing XD here in Italy the double cream doesn't exist, so I used the so called "panna da cucina" istead of the doeble cream.

  • I live in the US. Is Castor sugar just regular granulated sugar?

  • @gelica13 It's slightly finer than regular sugar, but regular sugar will work too.

  • @gelica13 Castor sugar in the US is called "Superfine" sugar. You can either buy Superfine sugar or you can whizz normal granulated sugar through a food processor, being careful not to take it so far its just powder.

  • @gelica13 caster sugar is not granulated, it is more softer and not in small cubes:)

  • @elphiebusayong You need to be able to whip it until it's stiff. You could use cream cheese and whip that instead.

    Heavy cream is better for this. Cream cheese is too thick.

  • You should try melting the chocolate and butter together au bain marie. Really, the taste is going to be much better and it's going to fudge much quicker.
