But then when he goes to the Supreme Kai and unlocks more "hidden power" with him and becomes "mysitc gohan." He's light years stronger than everyone and it is implied he is stronger than SSJ3 Goku ...somehow. Idk DBZ made much less sense after the Cell saga.

It was said that Gohan was studyin all this time (while Chi-chi was training Goten, lol). Meanwhile, Goku and Vegeta were training their asses off. Still, Gohan's sudden power up to mistic was a bit exaggerrated. It was Gohan who was supposed to finish Buu, but fans insisted on Goku getting more spotlight.

However Vegeta had never ascended to SSJ2 until he became Majin Vegeta and Gohan had, I suppose we are supposed to assume that Gohan was weaker than Vegeta, considering during the battle with Debura Vegeta kept complaining how they could have easily finished him off by then.
