While what Bailey is doing here is a far cry from actual Middle English pronunciation (he's doing it the way a modern English speaker might if they weren't acquainted with the rules), before the great vowel shift English had a vowel system pretty similar to what continues today in most continental European languages. Thus i's were pronounced ee, u's as oo's, etc.
