  • good eats is usually spot on but i think gordan ramseys scrambbled eggs r better! i do more butter (no milk), dont beat before putting in pan and season at end. these shows rock tho and all in all much more useful, interesting then ramsey. peace out x

  • I think it is a personal thing. I love so many of Gord's recipes, but his eggs were a runny sloppy hot mess. I much prefer a firmer, buttery scramble. As I said, a personal pref.

  • Wow, at 19ish seconds when the redneck cook smashes the egg you can hear the cameraman and director laughing.... in any other show this would detract from the production, but in this case it just makes the show that much more charming.

  • My dad is a scrambled egg master... Except when I try to mimic him I end up hurting myself because he habitually cracks his eggs on his knuckles. He's a gnarly old dude.

  • The trick is to experiment with different amounts of dairy. Rather than finding out a measurement you want to find out the color that the resulting mix should be. Another trick to getting them fluffy is to continue to flip the mix around while it's frying.

  • Gotta say, I don't agree with the whole "cooked in the pan, overcooked on the plate" thing I've heard so much about. I've found that the taste the best and are cooked the best when there's slight browning on the egg when you scramble it.

  • I grew up on overcooked eggs. Perfect timing at the dinner table was never something that existed in my childhood, so reheating food was a constant. However, as an adult now, I cook and eat properly through the wonders of Alton Brown's educating show.

  • I feel silly but the thing this helped me with the most is a hard boiled egg. I mean its not my fault really. I never usually make them so I just have them on occasion when my mom makes them or during easter when I was a kid.

    Apparently her method is very wrong because I just made some the good eats way and realized that my mom's were far overcooked. I don't put salt on them either but I decided to try some on my second.... I kind of forgot though x_X. It was just so tasty.
