  • @losttribe There is a slight difference between what you eat, and what your customers eat. Casu Marzu is banned in the EU and can't be sold commercially. On the other hand, rat droppings and urine are known to kill human beings and cockroaches are usually in contact with garbage, poison meant to kill rats and that's not healthy for you or anyone else. Oh, he tried Casu Marzu and as you can see in the F-Word, he hated it.

  • I received 3 of his cookbooks as a birthday gift. 1 of them has his recipe for fondant potatoes, and it's slightly different from the way he prepares it here: In the book, he adds the potatoes to the stock and has them simmer on the stove top, NOT in the oven. You then remove them from the stock, drain them, and color them on BOTH sides, not just the flat side. I guess the version seen here was a more simple one for the tv show with folks cooking at home. The show is called "Cook along."

  • @optiKalismo -- American ovens are not that exact. Most have dials marked or have digital controls that can be set at 25 degree increments, per standard American cooking instructions. This is a kitchen appliance in use, not a lab instrument. So tell me, is 392 closer to 375 or to 400?

    Also, I'm a "she". A "she" who uses an oven.

  • Good recipe by Ramsey, but I think the potatoes taste better when you cut them junk and beak em' up a little bit more and you get more caramelization and compounded flavors. Onions work great wish the dish too!

  • Rissole potatoes are the cats pajamas as well. So easy, just cut the taters into small cubes, heat a GOOD amount of oil in a saute pan, make sure you season the dildo juice out of the tater cubes, then brown one side of each cube then just toss..baste if desired and do not burn .Season to taste while hot, food absorbs seasoning better when oil is still hot on the product. This is not spam either i dont think.

  • A fondant potato is defined by it's cutting technique. Fondant is the biggest of the tourned potato. Tourné is the process of turning a vegetable into a barrel shape with seven even sides, mainly done to promote even cooking. Chateau potatoes are a smaller version of the fondant, and tournéing can also be done with many other vegetables. The process of cooking a potato in the stock I believe is also part of the "fondant" method but the main component is the cutting aspect.

  • This isn't really fondant potatoes. This is called boulangere potato. Fondant potatoes aren't browned. They're cooked almost until almost falling apart and the left to cool down in the stock so it soaks it up. Boulangere potatoes is browned and cooked with meat juices or stock if you're not doing a whole roast.
