@bobwatters Yes, that is true that fresh cheese is wonderful, but we make our recipes easier for people who don't want to buy a fresh wedge of Parmesan cheese or fresh mozzarella because that is all they would use it for. We expect people to learn to adapt the recipes on their own.

@bobomee Yes, you could just bake it and yes, you can you use different parts of the chicken. You may have to bake the pieces longer since they are thicker than the pieces we cut. And if you're using thighs, you should make sure to pop the thigh bone. So, it's not all bloody from the vein that runs along it.

@isawacat I do prefer olive oil actually. Mostly due to it's healthy properties. I usually don't fry things like this in it though. I use it as a substitute for butter all the time. It doesn't really add any flavor to the chicken (the garlic and herbs do that enough to overpower any flavor the olive oil may add if any). Don't stress too much. Cooking is really fun once you get into the swing of things. If you have anymore questions about cooking, Melissa and I are happy to help! ^_^
