Andy was "really wrestling" these women inasmuch as anyone "really" wrestles.

Andy had some of the top wrestlers of all time advising and mentoring him. He got good enough under their direction that he could have inexperienced women in the ring and lead them through his choreographed wrestling match without them getting hurt.

A ballerina could do the same thing: Get someone onstage with two left feet and make them look as though they had trained for years by taking control.

For the most part yes, though in a recent book I read, some of the matches he won because Bob Zmuda (his friend and the ref) would be slow on the count and not keep track of time. Plus Andy let some women win in an exclusive performance for a woman who was dying of cancer. Plus Foxy's and some others were rigged.
