Don't think that would be a problem. I'm currently running my Core i7 @ 4.1 GHz and at the same time cooling my GTX 480 (at stock speeds though) with no temp problems. All in all I'm very happy with this cooling solution and can highly recommend it!
SpeedFan shows the CPU core temps while the Aquaduct shows the water temp however I admit it's a bit strange why the CPU core temp is lower than the water temp. Regardless the computer flies at this speed and temps are not an issue anymore ;-)
Like I said above I'm not into making FSX movies but that won't be necessary since I can already tell you setting everything on max in FSX will bring even a rig like this one to it's knees. However what I am able to do with this rig is to have most of the settings fairly high but still have very crisp graphics and a smooth ride which is the most important thing in FSX if you ask me.
Correct me if I'm wrong but I think you get the same kind of multiple core use with SP2. Then you can also play manually with what cores and how many of them are used in FSX by using the AffinityMask setting in FSX.CFG. However the performance is not an issue anymore so I'm happy with what I already got :-)
Checked out the video you've made (FSX Extreme), very nice and it really does show what FSX can look like and perform like when you have the correct hardware for it!

Yes, I think not only the cooling performance but also the design is really great which to me is rather important since it's the kind of unit you will have "out in the open" fully visible at all times. Then the third great thing about it is it's very silent, feels pretty amazing to be able to run your computer @ 4 GHz while you barely can hear if it's on or not :-)

If you get the acceleration pack with FSX, it has a patch in it that allows the use of multiple cores, and you should see a definate difference.

I think so. Not everyone knows about it though, and it greatly improves performance.
