Do you see that little dark spot on the sidewalk where he places the egg? It looks kinda like a 3. Those marks are from an extremely hot heat source, probably a small blowtorch. Notice how the egg over that specific part of the sidewalk cooks almost instantly when just a little closer to the edge the egg is still raw and runny.
