OMG I just finished making this and it is REALLY good! I have been searching for a good soy-less vegan ice cream, and this one hits the spot.
I used all maple syrup (rather 50-50 mayple/agave). You definitely need to have a high speed blender like you said, because I put it in a cheap food processor and it wasnt creamy at all (and was quite gritty from the cashews). After transferring it to my high-speed blender it made it pretty creamy :) THANKYOU!!! :D

Almonds will taste good but cashews work best because they're slightly sweeter and have a higher fat content (and no skin although you could peel your almonds.) Macadamias are a good substitute.
I use the Ktec Champ HP3 blender. The Vita-Mix Countertop Blender with 2+ HP Motor is good too.

Um, this isn't really ice cream, it's a frozen desert but there is no cream added to it, so it cannot be a "cream".
Ice cream contains a minimum 10% milk fat per volume, this seems to have more of a recipe toward a gelato.

It took about 4 hours for the ice cream to freeze because I put in too much at once. next time I will split it in half and do two batches.
