WOW! Let's have a party. Some good cook'n going on. Love menudo, chorizo and eggs. I like using pig's feet, the cow's feet are too big and ugly. It is an individual preference, so quit the name calling. Thanks guy's.

you guys forgot the hominy...you can't have authentic mexican menudo without hominy....only kidding that looked delicious...keep up the good work and make us some more videos...love you're slaw video..hope you make some more I enjoy watching...thanks!
Tripas means INTESTINES. That was the CHITLINS. So Chitlins = Tripas. As for tripe, it is the stomach lining. Pansa is simply a nickname for belly, but is not the official word for the tripa which is Tripa. This dish originated in Africa and brought by the spanish, since there were no PIGS in Latin America and the Caribbean. We call this dish MONDONGO. The only difference is the seasoning.
Look up the different parts of a cow's digestive tract..."pansa" is not "tripas" and there are two kinds of "pansa"..."panza liza" and "pansa de aveja" as we call it in my neighborhod. I've been eating menudo, tripas ervidas, tripas fritas, mollejas, sesos, cesina, lengua, ojos atc. The Mexican corrected the gringo and it went right over the gringos, (and your) head. The sheet he rang out in the sink is pansa...not tripe. I stand by my first comment...Study up on it "gringo"...
Whatever you say....I wasn't a butcher in San Antonio, San Marcos, and New Bruanfels for 20 years and not learn the difference between tripe and tripas.

there are 4 stomachs in cows .. menudo can be made with all four.. plus cows feet.
panza / toalla / menudo (rumen) ... . the one that looks like a towel,
panal... (omaso) . .. the honeycomb that you mentioned,
libro (abomaso) .. looks like pages on a book,
cuajo (reticulo) ... looks kind of dark, its the monogastric stomach, thats where they take the cuajo culture to make cheeese.
great video.

It isn't tripe...it stomach. Tripe is very long and hollow like a straw. There is two kinds of stomach...smooth and honey comb.
cabritorsss 3 years ago
Sorry cabritorsss...
That is in fact tripe...You are half correct. It is part of the stomach. It is the lining of the stomach (also called offal)...
Tripas however, is what your are thinking of and that is the small intestines.
