Cook them in sesame oil in non-stick pan over medium heat. When hot, add scallops, turn the heat to medium high and sear for 3 mins until golden brown. Turn over and sear for 1 minute. Be careful not to overcook. Remove them from heat and put on plate. Add two teaspoons ginger, one tablespoon lemon or lime juice, and two tablespoons soy sauce to the pan, simmer for 1 minute over medium-high heat. Return scallops to pan and toss to coat. Reheat briefly and serve. You can add spring onion too.
To those sad he is off of the Food Network - he is and has been on CreateTV (local PBS) television. Great cook and great program, you can actually learn how to cook what he shows. Often times, "cooking shows" on the air are all flare and little to no substance. Simply Ming is NOT that.
Great video. Quick question...when I cook scallops, I can't get them to sear as they 'stick' when I try to turn them...is this because the pan/oil is not hot enough? Or am I not leaving them alone long enough?
@fmbighair I just tried this recipe, and I used olive oil. It turned out fabulous. The first thing I tried didn't work though. I tried butter and the pan caught fire.
He's the reason I got into cooking in the first place. I'd come home late from partying, (8yrs ago) and watch his rerun (East meets West) at 3 in the morning. I'd get so hungry, I had to get some shallot, lemongrass, sriacha, REAL ginger (no powder) and get down. People are shocked when I bust out da wok!! Go Ming!!
how to cook a scallop..... 1. hot pan with canola oil 2. add scallop and sear until brown 3. flip 4. add butter, thyme, and crushed garlic clove 5. baste 6. finished..
@marcbjohnson Well, you got that right. Ming does not cook Chinese food anymore. He makes food with half Asian and Western ingredients and calls it fusion. I think people were really not getting much info they were looking for. People are looking to a Chinese chef to teach Chinese food.
I do this dish but with a spicy dry rub.

may of been shitty scallops, when they have a hint of yellow, I don't use them.

you could also score it so it opens up and holds sauces easier.

do chefs like to cook with their watches on?

I hope guitarbumx isnt refering to Ming Tsai as an "unknowledgable poser goofball". Cause Ming is awsome!
7pointblue 3 years ago 3
Food Network needs to stop filling its primetime slots with unknowledgable poser goofballs and get the real chefs back on TV, like Mario Batali.

Ming Tsai actually teaches you how to cook. I was very upset that they took him off the FoodNetwork. Grest cook, thanks for the post.

It pissed me off that the Food Network took his show off the air. The Food Network is about personalities, not food or chefs.
marcbjohnson 3 years ago 42
Food Network sucks anyways
takadi 3 years ago 8
they should show reruns of the old shows, like Michael's Place, Hot Off the Grill, Taste, Too Hot Tamales, and all the others. Don't u agree?
barber747 3 years ago 2
@marcbjohnson i agree...they now have shitty cooks like flay who overkills everything with his spices : /
