  • Hi Denise. Love your website and your recipes. I am from a Lebanese background living in Australia and I have emailed all my Middle Eastern Friends who I work with.

    Your recipes are similar to those we make. Only exception is that we use more lamb than beef. Probably because this is an Australian thing. We have plenty of lamb in Australia.

  • @coto232 yes, just layer the meat o top of each other instead of cutting it into strips, then let it cook while it turns and slowly cut off the cooked meat.

  • Oh God! Im craving for shawarma!!!! I miss the authentic shawarma that I used to eat in a persian restaurant way back in my home town. :( I used to eat shawarma and keema with eggplant! dang that's so good! :) I usually put a splash of hot sauce! :))

  • also i'm going to powder it using majority of the whole spices so how much of each am i going to need? ginger and all spice will be powdered and the rest whole. and the green cardamon, do i use the shell as well or just the seeds? thanks.

  • i want to make 7 spice... can i substitute nutmeg for something? or just leave it out altogether cuz i cant have nutmeg/mace... also I've never heard of 'all spice'... is that just one spice on its own?

  • @chicharwali allspice is an actual whole spice, it is about twice the size of a black pepper. If you can't have nutmeg then just leave it out.

  • Beef and lamb shawarma is AWESOME, but chicken is also AWESOME! Hard to lose with shawarma in general.

  • 7 Mixed Spices:

    Allspice - Black pepper - Cinnamon - Cloves - Nutmeg - Fenugreek - Ginger

    Blind all together the equal quantities of all the above spices. keep in a sealed jar or container, it will last for at least six months.

  • Couldn't you use skirt steak for this as well as long as you use a grill and cut across the grain? Also, instead of green pepper I usually use anaheim chiles. They have next to no heat but for those that don't like green pepper it's a GREAT substitute for immense flavor.

  • @krenotenze yes yes and yes. :) you can definitely use skirt steak and yes I love Anaheim chillis as well. You are correct, just make sure to cut against the grain and the meat will be fine :)

  • 7 spices is a spice mix that is used a lot in Mediterranean and Middle Eastern cooking. It includes: allspice, black pepper, cinnamon, cloves, nutmeg, fenugreek and powder ginger.

  • the best hot/chili sauce to use on a shawarma is crystal hot sauce, its what every shawarma place in bahrain uses, always used to think it was arabic but its actually american, its cheap and is way better than tobasco if you can get hold of it i highly recomend

  • @Lilo6480 You can definitely add a little red wine to it but don't over do it or it will over power the flavor. Add a little bit, it will help to tenderize it as well :)

  • malgoom is the way forward, used to love shawarmas untill i had a malgoom, then the shawarma seemed a little inferior lol good vid though thumbs up!

  • DeDe I was reading about your Shawarma House on Camp Pendleton and just wanted to say that if you franchised that concept you could open one on my college campus and make a fortune. My college is UTA in Tx and there are a lot of Middle Eastern people that go there but there is no place reasonably near or on campus that offers up delicious middle eastern food. You would prob start making a profit within 3 months! But anyway, congrats on all of your success, have been a fan for a long time :)

  • It's weird...I had my first sandwich in Amsterdam, the guys had the hanging meat. It was the best food I had there, my girlfriend (Dutch) couldn't understand why I liked going there. I did.

  • Doner Kebap is closer to the Greek Gyros. I lived in Turkey and Germany and just loved the Turkish and Greek food. Turks and Greeks seem to get along fine in Germany for some reason...anyway..The Shawarma is a little different and very good. I had with cold onions and tomatoes on flat bread in London many years ago...dripped some oil/juice on my shirt, trousers and shoe that NEVER came out. But it was worth it!
