Hi Denise. Love your website and your recipes. I am from a Lebanese background living in Australia and I have emailed all my Middle Eastern Friends who I work with.
Your recipes are similar to those we make. Only exception is that we use more lamb than beef. Probably because this is an Australian thing. We have plenty of lamb in Australia.
Love your work. Congratulations and good luck with your website.
Hello! u said that if we have a stand up roaster you could show us how to make it, could you? :D jhahaha i have one and im in mexico and want to try em!
@coto232 yes, just layer the meat o top of each other instead of cutting it into strips, then let it cook while it turns and slowly cut off the cooked meat.
Your husband must be a big guy..... All the food you cook is the bomb. great video keep up the-good work ........ Send some to Chicago for a lil taste . Do you have a menseff* video
@dookindasie1 Mansef video is coming soon. Well my husband is not fat b/c he has to work out a lot to keep up with the good food :) You have to balance the food and the workouts LOL
I'm from Michigan too, and that's one of my favorite things to get at Middle Eastern Restaurants. I was looking for Hummus recipes cause I'm never happy with the way mines turns out and I found you! I can't wait to try your recipes.
Oh God! Im craving for shawarma!!!! I miss the authentic shawarma that I used to eat in a persian restaurant way back in my home town. :( I used to eat shawarma and keema with eggplant! dang that's so good! :) I usually put a splash of hot sauce! :))
also i'm going to powder it using majority of the whole spices so how much of each am i going to need? ginger and all spice will be powdered and the rest whole. and the green cardamon, do i use the shell as well or just the seeds? thanks.
i want to make 7 spice... can i substitute nutmeg for something? or just leave it out altogether cuz i cant have nutmeg/mace... also I've never heard of 'all spice'... is that just one spice on its own?
Couldn't you use skirt steak for this as well as long as you use a grill and cut across the grain? Also, instead of green pepper I usually use anaheim chiles. They have next to no heat but for those that don't like green pepper it's a GREAT substitute for immense flavor.
@krenotenze yes yes and yes. :) you can definitely use skirt steak and yes I love Anaheim chillis as well. You are correct, just make sure to cut against the grain and the meat will be fine :)
7 spices is a spice mix that is used a lot in Mediterranean and Middle Eastern cooking. It includes: allspice, black pepper, cinnamon, cloves, nutmeg, fenugreek and powder ginger.
the best hot/chili sauce to use on a shawarma is crystal hot sauce, its what every shawarma place in bahrain uses, always used to think it was arabic but its actually american, its cheap and is way better than tobasco if you can get hold of it i highly recomend
I love to watch and learn a different way of cooking scenes practically every county or region have different ways of cooking the same recipe,I just don't like you touching your hair while cooking raw meat, use a net or hair pin thank you and please don't be offended its just common scents Ive seen it in bunch of your cooking clips I still love what you do thanks for the hard work
Thank you so much for this wonderful recipe. I follow the same procedure at home. How about soaking the meat with cooking red wine overnight. What would you think?
@Lilo6480 You can definitely add a little red wine to it but don't over do it or it will over power the flavor. Add a little bit, it will help to tenderize it as well :)
@dedemed you really should u dont know what ur missing, its probably really unhealthy lol but so so good, im not if tha is the exact spelling but thats how its pronouced, and im not sure if its made all throughout the middle east cos i've only had them in bahrain
hey dede i mabe beef shawarma oh my god!!!!!!!!!it was yummy all my guest loved it, u are the best. can u teach how to make ghormeh sabzi with less ingedients or with dry mix herbs packets which i saw at wholesome choice market
DeDe I was reading about your Shawarma House on Camp Pendleton and just wanted to say that if you franchised that concept you could open one on my college campus and make a fortune. My college is UTA in Tx and there are a lot of Middle Eastern people that go there but there is no place reasonably near or on campus that offers up delicious middle eastern food. You would prob start making a profit within 3 months! But anyway, congrats on all of your success, have been a fan for a long time :)
It's weird...I had my first sandwich in Amsterdam, the guys had the hanging meat. It was the best food I had there, my girlfriend (Dutch) couldn't understand why I liked going there. I did.
thank you for tutorial...that is my favorite dish from middle east. my aunt husband is from there and he always buy shawarma. it's tender and juicy yummy!

7 Mixed Spices:
Allspice - Black pepper - Cinnamon - Cloves - Nutmeg - Fenugreek - Ginger
Blind all together the equal quantities of all the above spices. keep in a sealed jar or container, it will last for at least six months.
