My old Lemans had a sweet spot where you could hold the clutch without rolling back or stalling. Once you learn the sweet spot of your car, shifting up hill is a breeze. There is no need to ride the clutch at all.
Maybe it is different for Ferrari's?
I think I would be a little annoyed having to worry about shifting with that maze of a shifter.
This or the handbreak is not how to do it. Before taking your foot off the break, roll back a little off the cluth. When you feel the engine shake a tiny bit, thats where you keep the clutch. Then give it a little gas and roll off the clutch. This keeps you from rolling backwards, burning out and looking like an idiot by useing your handbreak.
Just use the handbrake instead of faffing about with the footbrake. Starting Check you're in neutral Turn on engine. Left foot clutch, select 1st gear. Press button on hand brake but keep it pulled up, right foot accelerator to about 2000rpm. Part lower the hand brake whilst still pulling up on it, Slowly release clutch until you feel car budge Release hand brake. Fully release clutch when moving >5mph Generous squirt of gas to build up speed, continue as normal.

Why don't you just keep your foot on the brake slide the bottom or top of your foot to the gas rev to about 2000 then let go of the clutch and the brake. That's what I do and it easier and safer.

@guitarmafia20: you can change gears when going UPhill. If a long incline and you're winding out the tranny that means YOU'RE EATING UP GAS so save gas and upshift..... if the engine bogs on the upshift then incline too much for gear: shift back down..
Downhill = low gear ONLY? I prefer saving gas so I may have it in 3rd on short street hills or even overdrive (5th) if I'm on the downhill of a major road or highway: brakes are cheaper than a clutch!
Sorry, if you're stopped on a steep hill and you have some jerk riding your rear bumper, you need to let out the clutch (half way) while you take your right foot from the brake to the gas. Otherwise your car WILL MOVE BACKWARDS and hit the car behind you. You can also use the emergency brake (if it's conveniently located behind the shifter--if it's a foot operated emergency brake, you're SOL).

What you do is to pull the hand brake, get the car to the biting point and release hand brake and u are off
