Omg! Antonio I have finally found you, I have been searching for you, ever since I saw you on Great Food on PBS. I love your passion for cooking. I never forgot when you went up into the Italian hillside to cook with the the men who take their goats to craze up there, and cooked up a quick italian meal on wood fire, you drink a spoonful of olive oil a vitamin. Every now and then I take a teaspoonful of extra virgin olive oil, I think it does the body good.
I love the variety in Italian cooking. Recipes don't just vary from region to region but from town to town-sometimes even from family to family. Fritatta is a great example of this, as is ragu! Would love to see a Southern ragu recipe from Antonio.

.... It's a complete disaster! No way! This is the worst way/manner to prepare an Italian "Frittata". Pay attention also to hands!
