Take charmander and spam ember. When his geodude and onyx burn, he'll use a burn heal and waste a turn. They don't have ground or rock moves anyhow.

On my childhood memories Yellow (my first video game EVER, I am never deleting that file), the only Pokémon I ever used was Pikachu. I was 4 or 5, so I can't remember how I ever made it past Brock. On my second Yellow I just used a Butterfree. :)
