The "secret ingredient" in cake mixes are these things called "polyglycerol esters." You can get them in a base of dry milk powder in this stuff called "N-FLATE" available from National Starch. Just go their website and order a free sample of it, it's like a pound so it will last you forever. Blend 1-2 tbs with the wet ingredients and it'll make any cake even better :)
The devil's cake was a hit, though I would add a bit more sour cream for even more moistness.
The red velvet cake also came out rather well. It had a great texture, but was a bit too sweet for my liking, and I really like sweet things. Also, the food coloring I used wasn't very heat stable, so it came out more of a light chocolate color . I would cut back on some of the sugar in the red velvet and replace the food coloring with 1 cup of grated beets.
I just did the devil's cake recipe and it came out great. It's in my fridge right now. I tasted the trimmings I cut off the top to level it and it's tender, moist and chocolatey. I've filled it with raspberry jam and am topping it with fresh raspberries for a birthday party this weekend.
I'm baking the red velvet cake recipe for Canada Day and will report how it turned out after.

@Jgaldragon I suppose you could use the juice. But keep this in mind. Beets are naturally high in sugar and unless you know to exchange (juice is a concentrated liquid, sugar isn't), it could throw off the cake if you don't take out some of the brown sugar. Baking has to be exactly to the recipe unlike other cooking methods. Good luck and let us know how it goes.
