Normal. Never played the game on Easy. Played it on Hard a few times, but couldn't get into it. Even after years of playing this game, I still keep the difficulty at Normal.
2:15 eh.. well, if you head towards the bunnies at the brick you attacked last and jump so you can roll jump when you hit it then the bunnies will follow you .. head to the wolf, when the first one sees you then jump and spin in air, do another spin before landing then rabbit kick the wolfs together, then the bunnies that is following you.. and so finish off the bunnies at the last brick .. this can get the time below 0:30

Only God knows where the flickering is coming from, probably the video codec or some framerate issues.
