  • A trick with fermented ginger ale : Squeeze out the air after pouring a glass and you'll need never worry about an explosive buildup of pressure before you come back fro the next glass.

  • I like "Reed's Ginger Ale". Actually "Reed's Elixer" cured my psoriatic arthritis.

  • instead of opening it so many times, you can (after the first glass full) squeeze the bottle so it looks as if you sucked some air out. in a day or so when you normally open it it will have just refilled with the carbon, not to bursting point but instead to the regular point.

  • I did the exact same method as him with the ginger ale, except i used limes, and it tasted and smelled alcoholic in less than 24 hours, what's up?

  • @some5672 You're smelling the fermentation. The yeast slightly ferments the drink while it carbonates it. Even in Alton's recipe there is a very little amount of alcohol, but very minuscule to alcoholic beverages like beer of wine. If you want it to be less fermented, ferment it in the fridge or just ferment it shorter than you did. I hope that helps! :o)

  • Ginger's been a huge part of my upbringing, I tend to put it in about everything I make, well with the exception of sushi that is.

  • well, you'll have pickled ginger as well, right. the pink ginger served with the dushi makes a great side dish.

  • I think the ginger soda needs more ginger. I might make it with the ginger pulp (which still has much flavor after steeping) in it.

    The bubbles are small and not as numerous as store bought soda.

    It is dry for a soda. Honey might taste better. Some recipes I have found use brown sugar.

  • I've seen people use something like that for fresh wasabi. I imagine anything you'd use a sharkskin grater for you could use for that.

    I wouldn't use a plastic bottle for that, though. A carboy with an airlock to let the gas escape should do nicely.

  • You can peel fresh ginger, and use his fruit drying process to dry your own ginger. Make sure you use a mandolin or something to slice it thin though.

  • Wow, AB's got a traditional Chinese herbal medicine cabinet! Those cabinets are kinds rare these days, since alot of them are replaced by metal cabinets that dispense packets of powdered herbs.

    As for the ginger-grater, you could use it to grind horseradish.

  • great episode, I noticed the "unitasker" as well, but remember, up until later episodes the bundt pan was still considered a unitasker...and now it isn't. So use ur imagination, maybe a backscratcher for your pet hamster?

  • I've made it recently, it has plenty of zest and bubbles, but can be a little on the dry side. I'm looking to add AB's pomegranate syrup to the finished ginger ale in a glass.

  • Mint could be a good addition. Try muddling a few pieces of mint with some sugar in the bottom of a glass and top with ginger ale.

  • I just made the ginger syrup and bottled it up, without the lemon juice. I'll be back in two days.

    However, if you make the syrup, it is plenty strong to mix into other things like seltzer or club soda. After all, that syrup was half a cup of water plus flavorings mixed into seven cups of water.

  • since ginger is fiberous then i suppose the ginger grater would work on other lighter fiberous foods. not sure what else that includes but im sure AB wouldn't have it as a unitasker. glad to see a new episode, favorite show ever
